Wow… this dessert is really… Wow.

But first….

I recently rolled my ankle :(

Because of the injury, I have to pull back on my running to allow the healing to take place.

In the mean time I have really been enjoying swimming! :)


I’m loving my little local pool! Always a lane free for me :)

Anyway, it was in this very pool the recipe was born. In my head anyway. As soon as I was done l I headed straight home for some creative time in the kitchen.

“The Chocolate Slab”

The ingredients:



(I kid you not- These 4 ingredients make chocolate! Real chocolate! AMAZING!!!!)

  • Tao Nutrition
  • Coconut Oil
  • Cacao Powder
  • Sweetener of your choice (I used coconut sugar)

Vary the amount depending of the size you require your slab to be and for your personal taste preference (More cacao for a darker chocolate, more sweet for a sweeter choc).   Simply taste the choc mix for your ideal creation.  :)



You can vary this to suit you, I used what we had in the cupboard and it was divine!

  • Shredded coconut
  • Medjool dates
  • Chia seeds
  • Pumpkins seeds

You could use nuts, different seeds or dried fruit. Actually, this would look really lovely topped with goji berries but I didn’t have any on hand.

(PS- I added frozen blueberries to mine- but this isn’t something that I wouldn’t necessary do again. I would personally limit the amount of different toppings to 5 just for balance).


I know it looks like lots of steps- but it really is so easy!

Place some baking paper in the bottom of a square tray so it comes up the sides. (The base of the tray will be the size of your slab).

Melt your coconut oil in a saucepan.

Reduce the temperature and add in your cacao powder, Tao Nutrition and the sweetness of your choice. Stir until well combined (Which should only take a minute at most). Remove from heat and pour into your tray on top of the baking paper.  Place this in the freezer.

Grab your topping ingredients out of your cupboard and chop if needed.

Remove your slab from the freezer, and begin to sprinkle your topping on the slab. The pieces should ‘go into’ the mixture- keep adding ingredients until they start to build up (ie not sink out of view). The more the merrier :)

Place your slab in the freezer. And after about 30 minutes…. remove the baking paper from the tray, place on a chopping board. Cut into pieces (I did a mix of large and small).

Return to the freezer until you need them.

Note- due to the coconut oil these will melt easily. You will need to keep them in the freezer until you need them. Meaning these are great for an at home dessert, but not great for a picnic. :)


Enjoy with family and friends. There wont be any left-overs- I promise!

We LOVE this recipe because it is fast to make, it features only natural ingredients and with Tao Nutrition added- its a filling start to the day.


Here is her Mango and Banana smoothie bowl topped with blueberries….


1 1/2 frozen bananas
1 1/2 cups of frozen mango
1/2 cup coconut water
1 scoop of Tao Nutrition organic vanilla bean
Blueberries for topping

How to:

Place ingredients (with the exception of the blueberries) in your blender and blend.

Top with blueberries

“Sometimes, I feel like cake.”

But, everybody knows traditional cake isn’t health promoting….



With traditional cake off the list – “I personally want to avoid the artificial sugar, bloating dairy, unhealthy fats and processed flours”

I needed something different, something better.

I needed something sweet, nourishing and high in protein.


This cake is life changing because:

  1. It takes next to no time to make
  2. There is minimal washing up
  3. It tastes….. AMAZING!    Oh and it is no bake too! Yay!

“Everyone knows they are 3 amazing reasons (well 4 actually!) to make this cake!”

All the Equipment you need is:
  • Food processor
  • A bowl to mold your cake
  • Baking paper to line your bowl


  • Tao Nutrition protein powder (1 scoop, or 2 for a large cake)
  • Medjool dates with seeds removed (Amount will vary depending on how big you want your dish to be. Measure the dates by the size of the bowl you are going to use to mold your cake)
  • A handful of pumpkin seeks
  • Cacao (1 Tao scoop)
  • Coconut oil (just a splash)

That’s it? Yep. Wow I know!

How to
  1. Process the pumpkin seeds until broken into little pieces. Stop the processor and add in a scoop of Tao protein powder and cacao. Turn the processor on and add in one date at a time. Now pour the coconut oil into the mix while the processor is on.
  2. Stop the processor and check the consistency. The mixture will be at its ideal consistency when it sticks together between your fingers when pinched. (If you need it to be drier, simply add more Tao. If you need more moisture simply add more coconut oil)
  3. Get out your bowl, and place a sheet of baking paper in it. Tip your mixture into this bowl and press down firmly to the mixture is packed in. Place in the fridge. That’s it!
  4. When you are ready to serve your cake, simply flip the cake out onto a board, and cut into pieces.



No one will believe you it’s healthy… so its up to you if you tell them or not! :)

My best friend was staying with me for a few days with her adorable 3 year old

“I wanted to make something healthy, new and high in healthy natural protein for us to enjoy”

“But… it had to be easy to make…. and delicious to eat”

 I was looking for inspiration

And I found it!

This recipe inspiration (and picture) came from the blogger at SixAteTea – I have altered her original recipe to make it high in healthy protein and nut-free too.

This cake involves NO BAKING!  And it’s VEGAN DIET FRIENDLY TOO!


The Natural Protein
Chocolate and Seed Cake



1 Cup Pumpkin Seeds

2 Cups Sunflower Seeds

2 Tablespoons of Coconut Oil

10 Pitted Medjool Dates

2 Ripe Avocados

2 Tablespoons of Tao Nutrition Natural Vegan Protein Powder (Choc or Vanilla)

2 Tablespoons of Cacao

1/2 Cup Coconut Milk

Berries (optional to top with)


How to:

Line a cake tin or bowl with baking paper

Combine Seeds, Coconut oil and 6 Medjool Dates in a food processor. Remove from processor, and press and pack the mixture into tin. Set in freezer.

Combine Avocado, Tao Nutrition, Cacao, 4 Dates and Coconut Milk in a food processor. Poor over the base and place back in freezer.

After 15 minutes you may want to decorate the top with berries, seeds (optional)

Let it set in freezer for about 2-3 hours and it will be ready to serve.
